In search of the ultimate fish sauce on The Fish Sauce Trail with leading Chefs Stuart Brioza, Edward Lee, Paul Qui and Bryan Caswell. Each has his own media title and his own style—Best New Chef (Bon Apetiti,/Food and Wine 2012), Top Chef, Iron Chef and Food Network BBQ King.

Our culinary journey from South to North Vietnam will feature the fish sauce, the food and the culture of Vietnam. We will visit Saigon, Phu Quoc, and Danang/Hoi An and learn about the three main styles of fish sauce and its role in the regional cuisine of Vietnam. The Chefs are bringing their knives and will engage with prominent Vietnamese chefs as well as participating in a Red Boat cook off on the beach in Phu Quoc Island. There will be anchovy fishing and fish sauce making so that each chefs goes home with his own cuvee.
